Super Food Slaw

FOR THE SALAD

  • 1 red cabbage shredded into thin strips
  • 1 red apple – cored and cut into chunks
  • 1 green apple – cored and cut into chunks
  • 1 bunch of spring/green onions cut thinly sliced
  • ½ cup cranberries
  • ½ cup of dried orange rind
  • 1 cup of walnuts
  • ½ cup shelled pistachios
  • 4 TBS chia seeds

FOR THE DRESSING

  • 1 grapefruit – juice and zest
  • 1/2 cup olive oil
  • 1/3 cup of apple cider/red wine vinegar
  • 2 TBS mayonnaise
  • 2 TBS of honey
  • 1 TBS Dijon mustard
  • Lots of Coarse Salt and Black pepper to taste

Instructions

Mix all the ingredients for the salad dressing together and set aside.

Add the shredded cabbage to a large bowl. Top with the red and green apples, spring onions, cranberries, candied orange rind and chia seeds

An hour before serving, toss the salad with the dressing. Massage with a glove or hands to evenly coat.

Just before serving scatter the salad with the walnuts and pistachios. Serve at room temperature.

SERVES 6-8
