It’s vibrant and loaded with healthy ingredients but it’s packed with flavor. I especially love the tart note the kumquats add. But if you can’t find them you can use grapefruit instead.
You are going to be rocking this slaw out for lunch and dinner all summer long. And the store-bought chicken makes it so easy to throw together.

Citrusy Chicken Slaw
Ingredients
FOR THE DRESSING
- 4 cups of shredded red cabbage
- 1 ½ cups of rotisserie chicken– shredded
- 2 baby cucumbers – sliced
- 1 cup of kumquats – sliced
- 4 mini peppers – sliced
- 4 peppadews – sliced
- 8 Kalamata olives- sliced
- 1 cup roasted beets -quartered
- 1 avocado – sliced
FOR THE DRESSING
- ½ cup good quality olive oil
- 1/3 cup of balsamic vinegar
- 1 TBS honey
- 1 TBS Dijon mustard
- Coarse salt and black pepper to taste
Instructions
Whisk the ingredients for the dressing together and set aside. Place the red cabbage on a flat platter.
Top with the rotisserie chicken, sliced cucumbers, kumquats, peppers, peppadews, olives, beets, and avocado.
Drizzle with the dressing just before serving.
