Summertime is all about stone fruits like these gorgeous, ripe and juicy yellow cling peaches.

As the temperatures soar I prefer to serve room temperature dishes and food that doesn’t require me to slave over a hot stove.

So this salad will be front and center on my table all summer long. I like to serve it pool side with some crusty bread.

This is the perfect dish to wow your friends and family. It’s great as an appetizer or side dish and it’s gorgeous on the eye.

I like to use the yellow cling peaches, but you can substitute white peaches, nectarines or plums.

Make sure to store all your fruit and tomatoes on the countertop (not in the fridge) so they can ripen and add sweet juicy flavor to this baby.

And it’s super important to use the best quality ingredients you can find.

And don’t skimp on the olive oil either.

A good Italian olive oil is a game changer.

It’s also worth splurging on the creamiest dreamiest Italian mozzarella cheese and make sure you drain and dry it well before adding it to the salad.

Yellow Peach + Tomato Caprese

Ingredients

FOR THE SALAD

  • 1/4 cup red onion sliced
  • 4 ripe peaches – cut into 8 slices
  • 45 heirloom tomatoes- cut into wedged
  • 1 cup of cherry tomatoes halved
  • 1 cup bocconcini balls- dry well and halve
  • A handful of fresh basil
  • Coarse Salt & Black pepper to taste

FOR THE DRESSING

  • 2 tablespoons red wine vinegar
  • Zest and juice of 1 lemon
  • 1/3 cup Italian olive oil
  • 1 TBS honey
  • 1 TBS pesto
  • Kosher salt & freshly cracked black pepper to taste

Instructions

Whisk the ingredients for the dressing together and set aside. Drain the water from the mozzarella and dry well with paper towels.

Combine the ingredients for the salad on a large serving platter. Drizzle with dressing and serve and season with coarse salt and fresh cracked black pepper.

Serve alongside some crusty Italian bread.

*** You can substitute the yellow peaches for white peaches, plums or nectarines.
