Need a quick and easy salad that can go with literally anything? Your search is officially over.

This Italian Salad is my summer go to during a heatwave.

When temperatures soar the last thing I feel like doing is turning on my ovens.

Instead I crave light and fresh salads I can whip up in a flash and enjoy poolside. And this beauty will not dissapoint.

It’s brilliant and so easy to make. Top it with some tuna or smoked salmon for a full meal.

I am obsessed with this combo

The way the bitter radicchio and dandelion greens pair with the marinated artichokes and salty parmesan cheese is just brilliant.

And the lemony dressing knocks it out of the park. Drizzle on everything for a vibrant zing.

And it’s so simple it’s the perfect side salad for any occasion.

Italian Summer Salad

Ingredients

Scale

FOR THE SALAD

  • 1 head of radicchio – coarsely chopped
  • 3 cups of dandelion greens
  • 2 cups of marinated artichokes
  • 1 cup Parmesan cheese shavings (optional)

FOR THE DRESSING

  • 1 lemon – zest and juice
  • 1/3 cup red wine vinegar
  • 1/2 cup Italian olive oil
  • 1 shallot finely minced
  • 2 cloves garlic finely minced
  • Kosher salt and freshly cracked black pepper to taste

Instructions

Whisk together the ingredients for the dressing and set it aside.

Cut the lettuce into bite size pieces and place them in a large bowl. Drain the marinated artichokes and scatter them on the salad. Garnish with parmesan shavings. Dress the salad just before serving.

SERVES 4 – 6
