Currently craving this loaded fruit, berry, and nut salad with salty Italian Parmesan.

The last few weeks I’ve been holed up at my computer inputting content for my new site.

I have put in 12 hour stretches fueled by coffee and tons of junk food. I mean it’s quick and convenient and leaves me more time to work.

But the truth is I am starting to feel a little sluggish, so for dinner tonight I’ve thrown together this delicious salad.

It’s overflowing with berries which are loaded with anti-oxidants, some walnuts for crunch.

I’ve also thrown in some dried figs to add some chew (because you know they are my favorite ingredient).

And then in my nod to Italy, I’ve finished it off with some Italian Reggiano parmesan.

This salad is insane…. One I have no doubt you will make again and again!

Berry Fig & Walnut Salad

Ingredients

Scale

FOR THE SALAD

  • 2 packs Butter lettuce
  • 3 Persian cucumbers cut thinly on the diagonal
  • 1/4 red onion thinly sliced
  • 1 pack blueberries
  • 1 pack of black berries
  • 1 red apple cut into chunks
  • 1 cup of dried figs cut into slivers
  • ½ cup walnut coarsely chopped
  • ½ cup Reggiano Parmesan Shavings

FOR THE DRESSING

  • ¼ cup olive oil
  • ½ cup white wine or apple cider vinegar
  • 2 TBS whole grain mustard
  • 2 TBS honey
  • Lots of Coarse Salt and Black Pepper to taste

Instructions

Whisk the ingredients for the dressing and set aside.

To assemble, place lettuce on a platter. Arrange cucumber and red onion slices on top. Sprinkle evenly with the berries, red apple, and dried figs. Top with walnuts and Parmesan shavings.

Drizzle the salad with dressing just before serving

SERVES 6-8
