This is just one of those random salads that came together based on what was in the fridge and what was in season. It’s winter at the moment so that means not a lot of tropical fruits on offer.

The black cherries add a tart and sweet note to the salad and the apples, peppers, and walnuts give it crunch.

The best part is it is loaded with all the vitamins and nutrients you need to get your body through the cold winter flu season.

Cherry and Apple Salad

Ingredients

Scale

FOR THE SALAD

  • 2 bags of romaine lettuce
  • 1 red apple cut into chunks
  • 8 mini peppers- cut into circles
  • 1 ½ cups of cherries – halved and pitted
  • ½ cup blueberries
  • ¼ red onion – thinly sliced
  • 1 cup of walnuts
  • ¾ cup of good quality feta cheese

FOR THE DRESSING

  • ½ cup olive oil
  • ½ cup red wine or apple cider vinegar
  • 2 TBS wholegrain mustard
  • 4 TBS honey
  • Lots of coarse salt & ground black pepper

Instructions

Whisk all the ingredients for the salad dressing together and set aside.

To assemble the salad, place the lettuce on a large flat platter. Arrange the apples, peppers, cherries, and blueberries, and red onions on top. Crumble the feta cheese over the salad and scatter with the walnuts.

Dress the salad just before serving.

SERVES 6
