I LOVE LOVE LOVE coleslaw. It’s one of my favorite go-to salads to make because the combinations are endless.
Superfoods are items that are naturally full of nutrients, antioxidants, and things that are shown to improve well-being and longevity.
And this slaw is delicious and packed with Vitamin C, beta-carotene, essential minerals, antioxidants, and healthy fats.
And the grapefruit juice and zest in the dressing adds a little something special to an already incredible salad.
I always like to add a crunchy element like nuts and a chewy ingredient like dried fruit. Feel free to experiment using what you have in your pantry.

Super Food Slaw
Ingredients
FOR THE SALAD
- 1 red cabbage shredded into thin strips
- 1 red apple – cored and cut into chunks
- 1 green apple – cored and cut into chunks
- 1 bunch of spring/green onions cut thinly sliced
- ½ cup cranberries
- ½ cup of dried orange rind
- 1 cup of walnuts
- ½ cup shelled pistachios
- 4 TBS chia seeds
FOR THE DRESSING
- 1 grapefruit – juice and zest
- 1/2 cup olive oil
- 1/3 cup of apple cider/red wine vinegar
- 2 TBS mayonnaise
- 2 TBS of honey
- 1 TBS Dijon mustard
- Lots of Coarse Salt and Black pepper to taste
Instructions
Mix all the ingredients for the salad dressing together and set aside.
Add the shredded cabbage to a large bowl. Top with the red and green apples, spring onions, cranberries, candied orange rind and chia seeds
An hour before serving, toss the salad with the dressing. Massage with a glove or hands to evenly coat.
Just before serving scatter the salad with the walnuts and pistachios. Serve at room temperature.
