So I have been taking lots and lots of photos and working hard on content for my new site. The last few recipes I have been focusing on getting a lot of color onto the plate.
This salad started out with a head of cauliflower and I just keep adding veggies till I ended up with a rainbow.
The bonus is that different colored foods give us different nutrients, so this salad is jam-packed with healthy vitamins and it’s oh so pretty to eat.

PrintCauliflower & Radish Rainbow Salad
Ingredients
FOR THE SALAD
- 1 head cauliflower – broken into very small florets
- 1 bunch radishes
- 1 red onion
- 1 yellow pepper
- ½ red cabbage
- 6 large carrots
- 1 bottle of pepperdew cut into strips
- A handful of Italian parsley – chopped
FOR THE DRESSING
- 1/2 cup good olive oil
- 1/2 cup red wine vinegar
- 1 TBS Dijon mustard
- 2 TBS mayonnaise
- 2 TBS honey
- Lots of coarse salt and black pepper
Instructions
Cut the onion, radishes, onion, yellow pepper, carrots and cabbage on a mandolin using the thin julienne blade. Add these to the bowl. Slice the pepperdew and chop the parsley. Add it to the bowl.
Just before serving drizzle the salad with dressing and toss to coat. Serve at room temperature
