Nothing screams summer more than a big fresh fruit platter.

I have been posting so many fall recipes, that it was time to bring out a few of those summertime classics that are a hit every time I serve them.

When I entertain, this tropical fruit platter is the most popular dessert. I love the way my guests can pick or choose the fruits they like.

This simple platter can be adapted based on what fruit is available. The key to this platter’s success is in choosing the best quality products. By sticking to the fruits that are in season, everything on the platter will be sweet and juicy and bursting with flavor.

It is also important to shop for fruits from a rainbow of color families. So you want some red, green, orange, yellow, purple and pink fruits.

Here’s to an amazing summertime filled with tons of friends and family.

Summertime Fruit Platter

Ingredients

Scale
  • 2 cups litchis
  • 1 cup red cherries
  • 1 cup white cherries
  • 3 kiwi fruits- peeled and sliced
  • 4 apricots- pit removed and cut into quarters
  • 2 nectarines- pit removed and cut into slices
  • 3 plums – pit removed and cut into quarters
  • 1 small bunch of green grapes
  • 1 small bunch of red grapes
  • 2 mangos – cut into slices
  • 1 pack green or black fresh figs- halved

Instructions

Wash and dry the fruit and cut and slice as instructed above.

Arrange the litchis in the center of a large flat platter.

Separate the fruits into piles by colors… (green – grapes, figs, and kiwis ), (yellow/orange – mangos, cherries, apricots & nectarines), (red/purple -cherries, grapes, and plums).

Place the same colored fruit on opposite corners of the platter to create a triangle or square. Move to the left of each color and repeat with the next colors. Repeat with the 3rd color family so that no fruits of the same color are next to each other.

SERVES 10-16

Notes

You can substitute the fruit with other choices (berries, melons, pineapple, etc…), halve the quantity, or use less of a variety but make sure to separate the fruit by color as much as possible.
