Cauliflower is one of those amazing veggies that just absorbs whatever seasoning you add to it.
Jade is a huge fan so I make it a huge batch every week.
It’s great for creating loaded bowls or I serve it as a side with steak, fish, or chicken.
The recipe is so simple and it takes no time at all. But your family and friends will think you spent hours in the kitchen.
I love the big bold flavors that the za’atar, turmeric, curry, and ginger add.
It’s perfect for lunch, weeknight dinners, and anytime you are entertaining.

Za’atar Roasted Cauliflower
Ingredients
- 1 Head of cauliflower
- 1 TBS green za’atar spice
- 1 tsp turmeric
- 1 tsp curry powder
- 1 tsp ginger
- ½ tsp coarse salt
- ½ tsp black pepper
- 2 TBS olive oil
- Good quality olive oil to finish
- 2 TBS chopped green onions or chives to garnish
Instructions
Preheat the oven to 400 F/200 C
Trim the leaves off the cauliflower with a knife. Break the cauliflower into small florets/chunks.
In a small bowl combine the za’atar, turmeric, curry powder, ginger, salt and pepper. Place the florets in a large bowl. Add the spice mix and 2 TBS of olive oil. Toss to coat so all the florets are evenly seasoned.
Place the cauliflower on a baking sheet and roast in the oven for 20-25 mins until it’s golden brown and nutty.
Drizzle with good quality olive oil and garnish with green onions.
